Vinification: Exclusive method without adding sugar. In barriques and small tanks. Aging of reserve wines in French oak barrels. Indigenous yeasts.
Assemblage: 35 % 2019 - 40 % 2018 - & 25 % Réserve Perpétuelle.
Dosage: 2 g/l
HOF: It means "Hall Of Fame" like the long walls full of graffiti painted by a single< span> writer or by members of the same crew of writers. I called this collection this because, once tasted, each bottle forms a piece of its own "Hall Of Fame", a visual work of art made up of champagne, art and tasting notes.
Each "HOF" bottle has painted a message that can communicate, even just through a story, what we want to tell the world or someone.
