Terroir: Vertus Premier Cru and other Premiers Crus. Rendzina on plaster
Age of the vines: 40 years.
Vinification: Cuvée (only flower must). 7 months on the lees, minimal use of sulfur dioxide. 75% steel and 25% unfiltered oak barrels.
Assemblage: 3 consecutive vintages (20% reserve wines).
Aging: in bottle on the lees, in nineteenth century cellars. Low and constant temperature.
Dosage: Brut Nature
HOF: It means "Hall Of Fame" like the long walls full of graffiti painted by a single< span> writer or by members of the same crew of writers. I called this collection this because, once tasted, each bottle forms a piece of its own "Hall Of Fame", a visual work of art made up of champagne, art and tasting notes.
Each "HOF" bottle has painted a message that can communicate, even just through a story, what we want to tell the world or someone.
